American Fluffy Pancakes

Ingredients
  

  • 200 g self-raising flour or plain flour + 2 tsp baking powder
  • 1 tsp baking powder
  • 1 tbsp caster sugar
  • 0.5 tsp fine sea salt
  • 2 large eggs
  • 250 ml milk or buttermilk
  • 25 g butter melted, plus extra for frying

Method
 

  1. Whisk the flour, baking powder, sugar and salt together in a large bowl.
  2. In a jug, beat the eggs with the milk and melted butter.
  3. Pour the wet into the dry and stir just until combined, a few lumps are exactly right. Do not beat it smooth. Leave to stand for 5 minutes; it will thicken and begin to bubble.
  4. Heat a non-stick frying pan over a medium heat, add a little butter and wipe out the excess.
  5. Drop in small ladlefuls, spaced well apart. Cook undisturbed for about 2 minutes, until bubbles rise and burst across the surface and the edges look set.
  6. Flip and cook for a further minute, until golden and cooked through.
  7. Keep warm in a low oven while you cook the rest. Serve stacked, with plenty on top.

Notes

Makes about 8 pancakes. Best eaten fresh from the pan, but the batter will happily wait 30 minutes, and cooked pancakes reheat well in a toaster or a low oven.
