Asian Prawn, Ginger & Spring Onion Stir Fry

Ingredients
  

  • 240g cooked Tiger Prawns
  • 2 Green Chillies chopped
  • 3 Garlic cloves, sliced
  • 20g Coriander, leaves and stalks separated
  • 1 Tbsp Caster Sugar
  • 3 Limes, juice of 2 limes and 1 to serve in wedges
  • 2 Tbsp Shaoxing Sauce
  • 1 Tbsp Groundnut Oil
  • 4 cm Ginger, finely sliced, then diced. Skin left on
  • 8 Spring Onions, finely sliced
  • 1 Red Pepper, thinly sliced
  • 1 Yellow Pepper, thinly sliced
  • 200g Beansprouts
  • 1 Tbsp Soy Sauce
  • Freshly Ground Black Pepper
  • Egg Noodles, to serve

Method
 

  1. Place the Prawns in a bowl
  2. Put the Chilli, Garlic, Coriander stalks and Caster Sugar in a spice grinder or small food processor and whizz together
  3. Add half of the Lime juice and the Shaoxing sauce
  4. Pour this over the Prawns
  5. Heat the Groundnut Oil in a wok
  6. Add the Ginger and Spring Onions and fry for 1-2 minutes
  7. Add the Peppers and fry for 3 min, until the Peppers starts to soften
  8. Add Bean Sprouts and stir together until the Bean Sprouts start to wilt
  9. Add the Soy sauce and a really good grind of Black Pepper, then tip the lot into a serving dish
  10. Add the Prawns to the wok
  11. Toss for 1-2 mins until they are warmed through
  12. Add the marinade and swirl the wok quickly, then tip the lot onto the Peppers and Beansprouts
  13. Chop the Coriander leaves roughly
  14. Sprinkle Coriander over and add the remaining Lime juice
  15. Serve with Egg Noodles cooked according to packet instructions with extra Lime wedges for squeezing over

Notes

When frying the ginger and spring onions, keep the heat high but be sure to stir constantly to prevent them from burning, as this will lead to a bitter flavour rather than a sweet, aromatic one.
For perfectly crisp-tender peppers, avoid overcooking them; they should retain a slight bite. This ensures a pleasing texture contrast in your stir-fry.
Prawns cook very quickly, so only toss them in the wok for 1-2 minutes until they are just warmed through. Overcooking will make them rubbery and less enjoyable.
