Method
- Season the beef chunks generously with salt and pepper.
- Heat the olive oil in a heavy casserole over a medium-high heat and brown the beef on all sides in batches.
- Set aside.
- Reduce the heat to medium, add the onion and cook for 5–6 minutes until softened.
- Add the garlic, cumin, smoked paprika, oregano and chilli powder and cook for 1 minute until fragrant.
- Stir in the tomato purée, chopped tomatoes and beef stock.
- Return the beef to the pan, bring to a gentle simmer, then cover and cook on a low heat for 1.5 hours, or until the beef is tender enough to shred with two forks.
- Lift the beef out and shred with two forks, then return it to the pan along with the black beans.
- Simmer uncovered for 5–10 minutes to thicken and check the seasoning.
- Warm the tortillas in a dry pan or wrapped in foil in a low oven.
- Spoon a line of rice down the centre of each, top with the shredded beef and beans, a scattering of cheese and a little coriander.
- Fold in the sides and roll up tightly.
- Serve immediately with lime wedges, salsa, sour cream and avocado.

Notes
For a deeper flavour, cook the beef the day before — it improves overnight. Swap the black beans for refried beans if you prefer a creamier filling, and use corn tortillas for a gluten-free version (warm them gently to stop them cracking).
