Chicken Milanese with Grapefruit and Fennel Salad

Super tasty, super easy and super quick. This Chicken Milanese recipe with a grapefruit and fennel salad is simple enough to prepare after work, but good enough to serve to company. Winner winner chicken dinner!

Ingredients
  

  • 2 Chicken Breasts, flattened under cling film
  • 1 Egg
  • 50g Plain Flour, seasoned
  • 100g Panko breadcrumbs
  • 100g Butter
  • A few sprigs of Tarragon, chopped roughly
For the Salad
  • 1 Fennel, shaved into ice
  • 1 Pink Grapefruit, segmented and juiced
  • A Selection of Radicchio salad leaves
For the Dressing
  • 25ml White Wine Vinegar
  • Grapefruit Juice, from above
  • 1 Tbsp Dijon mustard
  • 50ml Vegetable Oil
  • A few sprigs of Tarragon
  • A splash of Water
  • Sea Salt and freshly ground Black Pepper
To Serve
  • Lemon wedges

Method
 

  1. Dip the Chicken into the Flour, Egg, and then the Breadcrumb mix.
  2. In a pan fry the Chicken for 5 minutes until they are golden brown and crispy, then flip over and cook for a further 4-5 minutes
  3. Add a few sprigs of Tarragon
  4. Then, using a spoon, nape with Butter
  5. Whisk together the ingredients for the dressing
  6. Place the Radicchio leaves into a serving bowl, and top with the drained Fennel and Grapefruit segments
  7. Spoon over the dressing
  8. Place the Chicken onto plates and garnish with Lemon wedges
  9. Serve with a few chips

Notes

Ensure your oil is shimmering before adding the chicken, this helps make the chicken crispy and not greasy.
Basting with butter and tarragon will infuse flavour into chicken.
Use a mandoline or a very sharp knife to get the fennel thinly shaved.
