Eton mess is a delightful summer classic, famed for its effortless charm and irresistible blend of textures. Ingredients
  

  • 400g ripe strawberries, hulled
  • 2 tbsp icing sugar
  • 300ml double cream
  • 1 tsp vanilla extract
  • 4 meringue nests (about 60g), roughly crushed
  • Few small mint leaves, to garnish (optional)

Method
 

  1. Set aside a small handful of the prettiest strawberries for the top.
  2. Roughly chop the rest and tip into a bowl with 1 tbsp of the icing sugar.
  3. Crush lightly with a fork to release some juice, then leave to macerate for 10 minutes.
  4. Whip the double cream with the remaining 1 tbsp icing sugar and the vanilla until it holds soft peaks — stop before it goes stiff.
  5. Gently fold the crushed meringues and the macerated strawberries (with their juice) through the cream.
  6. Don't over-mix — you want streaks of pink and pockets of meringue.
  7. Spoon into glasses or bowls, top with the reserved strawberries and a few mint leaves, and serve straight away.

Notes

Use shop-bought meringue nests for speed, or make your own the day before. Assemble at the last minute — the meringue softens quickly once it meets the cream.
