Ingredients
  

  • 500g Lamb Fillet, sliced
  • 2 Tbsp Vegetable Oil
  • 1 Tsp Cumin Seeds
  • 1 Tsp Turmeric
  • 1 Tsp Chilli Powder
  • 1 Tsp Garam Masala
  • 1 Tsp Sea Salt
  • 2 Onions, sliced
  • 4 Garlic Cloves, finely chopped
  • 4cm Ginger, finely chopped
  • 2 Green Chillies, sliced
  • 2 Potatoes, cubed
  • 200ml Water
  • 15g Coriander

Method
 

  1. Heat the Oil in a large pan
  2. Add the Cumin Seeds and fry for 30 seconds
  3. Add the Onions and cook until golden
  4. Add the Garlic, Ginger and Chillies and cook for 2 minutes
  5. Add all the ground Spices and Salt and cook for 1 minute
  6. Add the Lamb and brown on all sides
  7. Add the Potatoes and Water
  8. Cover and simmer for 25-30 minutes until the Lamb and Potatoes are cooked
  9. Garnish with Coriander and serve

Notes

For an extra flavour boost, consider marinating the lamb for at least 30 minutes in a little yogurt and a pinch of the spices before browning.
Adjust the amount of green chillies to your preferred spice level. For a milder dish, remove the seeds.
If the sauce becomes too thick during simmering, add a splash more water or a little stock to achieve your desired consistency.
