Method
- Preheat the oven to 180°C fan.
- Mix the oil and curry powder in a bowl and brush it all over the monkfish.
- Keep the marinated fish in the fridge for an hour.
- Place the monkfish on a tray and roast in the oven for 5 minutes, depending on its thickness.
- Squeeze the lemon juice on the fish just before serving.
For the scallops: tip the scallops into the marinading bowl and mix to cover with the remaining oil and curry powder.
- In a very hot pan, fry the scallops for 1-2 minutes, then remove onto kitchen paper.
For the leeks: add avocado oil to a saucepan with cumin, nigella and sesame seeds. Sauté until spices turn light brown or start crackling. tip:Be careful not to burn the spices in this step. Sauté them gently until they are fragrant and lightly coloured; burnt spices will impart a bitter flavour to your dish.
- Add the leeks and cook for about 4-5 minutes to soften.
- Add the wine and reduce by half, then add coconut cream and double cream.
- Bring to a simmer, add the scallops and some chopped chives.
- Season with salt and lemon juice.
To serve: divide the creamy leek & scallop mixture among warm bowls. Top with the monkfish.
- Garnish with chopped chives and pea shoots.
- Serve and enjoy.
