Scallops with Apple, Fennel and Celeriac Salad

Scallops are a special treat. When cooked properly the flesh is tender and sweet and utterly delicious. combined with this apple, fennel and celeriac remoulade just enhances the treat

Ingredients
  

  • 12 Scallops
  • 15g Unsalted Butter
  • 1 Apple
  • 2 Lemons, juice only
  • 1 Fennel Bulb
  • 0.5 Red Onion
  • 0.25 Celeriac
  • 6 Tbsp Shaoxing Rice Wine Vinegar
  • 4 Tbsp Caster Sugar
  • 10g chopped Dill
  • Sea Salt & freshly Ground Black Pepper
  • 10g Walnut halves
For the Dressing
  • 2 Tbsp Kefir Yoghurt
  • 1 Tsp Creamed Horseradish
  • 1 Tbsp Extra Virgin Olive Oil
  • 1 Tbsp Avocado Oil
  • 1 Tsp Caster Sugar
  • 30g Baby Green leaves

Method
 

For the Dressing
  1. Combine the Kefir and Horseradish in a small bowl
  2. Season to taste
  3. Add the Olive Oil, Avocado Oil and 1 Tsp Caster Sugar
  4. Set aside
For the Remoulade
  1. Chop the Apple into matchsticks
  2. Drop the matchsticks into a bowl with the Lemon Juice
  3. Quarter the Fennel removing any tough outer leaves if necessary
  4. Remove the hard core at the base of the bulb
  5. Chop into matchsticks and place with the Apple
  6. Thinly slice the Red Onion and add this to the Apple and Fennel in the Lemon Juice
  7. Peel the Celeriac and cut the flesh into matchsticks
  8. Add this to the bowl and Lemon Juice
  9. In a separate bowl mix together the Rice Wine Vinegar and Caster Sugar until the sugar has dissolved
  10. Lift the Apple, Fennel, Onion and Celeriac out of the Lemon Juice into a serving bowl
  11. Toss in the chopped Dill
  12. Add the sweetened Rice Wine Vinegar
  13. Season to taste
  14. Divide the Apple Salad between 2 plates
  15. Brush each side of the Scallops with Groundnut Oil
  16. Heat a frying pan to nearly smoking hot
  17. Season each Scallop and place in the pan
  18. Cook for no more than 2 minutes on each side until lightly brown
  19. Add the butter and spoon over when foaming
  20. Remove the Scallops and place equally on top of the Apple Salad
  21. Divide the Baby leaves between the plates
  22. Spoon the Horseradish dressing over the leaves
  23. Sprinkle the chopped Walnut halves over and around the leaves
  24. Serve with French Fries and enjoy

Notes

Be careful not to overcook the scallops, as they can quickly become rubbery. A minute or two on each side is often all that's needed to achieve a beautiful golden-brown crust while keeping the interior succulent and tender.
