This Spiced Simnel Fridge Cake combines traditional, warm Easter fruitcake flavours with the dense, fudgy texture of a no-bake dessert. It tastes richly spiced and deeply nutty, featuring a sweet contrast between citrusy fruit and toasted almond paste.

Ingredients
  

  • 200g Dark Chocolate (70% cocoa solids), chopped
  • 150g Milk Chocolate, chopped
  • 100g Salted Butter, cubed
  • 60g Golden Syrup
  • 3 Tsp Mixed Spice
  • 150g Ginger Nuts, crushed
  • 100g Blanched Almonds, roughly chopped
  • 200g Marzipan, chopped into chunks
  • 1 large Orange zest only
  • 100g Dried Apricots, finely chopped
  • 100g Maltesers

Method
 

  1. Grease and line the base and sides of a 20cm round cake tin with baking parchment
  2. Put the Dark and Milk Chocolate in a heatproof bowl with the Butter, Golden Syrup and Mixed Spice
  3. Sit over a pan of gently simmering water and allow to melt, stirring occasionally, until smooth and combined
  4. Set aside to cool slightly
  5. Meanwhile, put the Ginger Nuts in a plastic food bag, then bash into pieces using a rolling pin
  6. Tip into a large mixing bowl and add the Almonds, Marzipan, Orange zest and Apricots
  7. Pour in the melted chocolate mixture and stir until well combined
  8. Spoon into the prepared tin, pressing the mixture down evenly
  9. Arrange the Maltesers in a circle around the outer edge
  10. Cover and chill for at least 1 hour or until firm
  11. Allow to stand at room temperature for 10-15 minutes before slicing and serving

Notes

- Ensure the chocolate mixture cools slightly before adding it to the dry ingredients. If it's too hot, it can melt the marzipan and apricots too much, making the mixture difficult to handle and affecting the final texture.
- Don’t over-crush the ginger nuts; aim for a mix of larger and smaller pieces. This gives more interesting texture to the fridge cake, rather than a uniform, fine crumb.
