Crab Cakes with a Rocket and Chilli Dressing
Delicate crab cakes bound simply with mash, ginger and lime, pan-fried until golden and served on peppery rocket with a sweet chilli dressing. There is no heavy breadcrumb coating here — just sweet white crab meat, lightly held together, so the flavour of the crab shines. Fresh, vibrant and surprisingly easy.
From Recipes to Bank — the original ring binder where this site began, circa 2008.
Why this works
- Using cooled mashed potato as the binder keeps the cakes light and lets the crab stay the star.
- Fresh ginger and lime lift the sweet crab without overpowering it.
- Frying until golden on both sides gives a crisp exterior against the soft, delicate middle.
- A sweet-and-sharp chilli dressing over peppery rocket cuts the richness and brings the plate alive.
Ingredient notes and swaps
- Fresh white crab gives the best flavour; good-quality tinned or pasteurised crab works at a pinch.
- Floury potatoes such as Maris Piper mash lightest; make sure the mash is cold before mixing.
- Adjust the chilli in the dressing to taste — it is meant to be sweet with a gentle kick.
- Add a little lime zest or coriander to the mix for extra freshness.

Notes
Avoid overcrowding the pan, as this can lower the oil temperature and lead to unevenly cooked or greasy crab cakes. Cook them in batches if necessary, allowing enough space for each to brown beautifully.

Let us know how it was!Tips for success
- Keep the cakes an even, not-too-thick size so they heat through without over-browning.
- Do not overcrowd the pan; fry in batches so they colour rather than steam.
- Chill the shaped cakes for a few minutes if they feel soft, to help them hold together.
Make ahead, storage and reheating
- Shape the crab cakes a few hours ahead and keep them chilled — they firm up and hold together better for it. The chilli dressing keeps for a couple of days. Fry the cakes just before serving so they are hot and crisp.
What to serve it with
- The rocket salad is built in; add crusty bread and a wedge of lemon, or a few skinny fries for something more generous.
FAQ
Can I use tinned crab? Fresh is best, but good tinned or pasteurised white crab works well.
Why do my crab cakes fall apart? The mash may be too warm or wet; use cold mash and chill the shaped cakes before frying.
Can I make them ahead? Yes — shape and chill them a few hours ahead; fry to serve.
How spicy is the dressing? Sweet with a gentle kick — adjust the chilli up or down to taste.
