- Mix together the Mayonnaise, Lemon zest, Capers and Dill.
- Season to taste
- Cook the Fish Fingers according to packet instructions, or in a Pre-heated Oven 180 degrees C for 10 minutes
- Spread the Lemon Mayonnaise on four slices of bread
- Add the Fish Fingers and Rocket
- Top with remaining slices and serve
