Ingredients
  

  • 450g Lamb Mince
  • 2 Tbsp Paprika
  • 2 Tsp Ground Cumin
  • Pinch of Cayenne Pepper
  • 20g Parsley, chopped
  • 25g Coriander, chopped
  • 4 Garlic Cloves, peeled and crushed
  • Zest of 1 Lemon
  • Sea Salt & freshly Ground Black Pepper
  • 2 Tbsp Rapeseed Oil
  • 2 x 400g tins Chopped Tomatoes
  • 2 Tsp Caster Sugar

Method
 

  1. Mix together the Spices, Garlic, Parsley and half of the Coriander
  2. Split in to half
  3. Mix half thoroughly into the Lamb Mince with the Lemon Zest and set other half aside
  4. Season to taste and combine using your hands
  5. Slightly wetting your hands in cold water shape the mixture into roughly 16 equal sized balls
  6. Heat the Oil in a large frying pan
  7. Fry the meatballs in batches for about 5-6 minutes each batch, turning to brown evenly
  8. Set aside
  9. Put the remains spice mix in the same pan and stir over a gently heat for 1 minute
  10. Add the Tomatoes, Sugar and season to your taste
  11. Simmer for 25 minutes until thick, stirring occasionally
  12. Add the Meatballs
  13. Cover and simmer for 15 minutes
  14. Scatter over the remaining Coriander
  15. Serve with Rice, seasonal vegetables of choice or simple rustic crusty bread

Notes

Wetting your hands helps prevent the mince from sticking, making it much easier to form evenly sized balls. This ensures they cook at the same rate and look consistent.
Avoid overcrowding the pan when frying your meatballs. Cooking in batches ensures each meatball browns properly rather than steaming, developing better flavour and texture. Patience here pays off!
