Warm Beef Salad

A warm, fajita-bright beef salad — seared fillet sliced over crisp leaves and red cabbage with peppers and onions, avocado and a zingy lime-and-cumin dressing. Substantial but fresh, it is a full meal that eats light, and it comes together fast.

Why this works

  • A lime, cumin and cayenne dressing brings a Mexican-bright, zesty heat that wakes up the whole bowl.
  • Warm steak over cool, crisp leaves is the heart of a good warm salad — the contrast is the point.
  • Avocado and sautéed peppers add richness and sweetness to balance the sharp dressing and the savoury beef.

Ingredient notes and swaps

  • Fillet steak — tender and quick; rump or sirloin work well too, sliced thinly across the grain.
  • Lime and cumin — the backbone of the dressing; do not skimp on the fresh lime.
  • Avocado — for richness; add it at the end so it stays fresh.
  • Leaves — romaine and red cabbage for crunch; any sturdy, crisp leaves do the job.

Don't overcrowd the pan when cooking the onions and peppers; cook in batches if necessary to get a good char.
Serve immediately while the beef and vegetables are still warm for the best flavour.

Tips for success

  • Sear the steak hard, rest it, then slice thinly across the grain so it stays tender.
  • Soften the peppers and onions properly for sweetness against the sharp dressing.
  • Dress the leaves lightly and at the last minute so they stay crisp.
  • Pile the warm beef on top just before serving for the best warm-and-cool contrast.

Make ahead, storage and reheating

  • Make ahead: Make the dressing ahead and prep the vegetables; cook the beef and assemble to serve.
  • Storage: Components keep a day; dress only what you will eat.
  • Reheating: Best fresh — the beef is meant to be warm, not reheated.

What to serve it with

  • It is a meal in itself; warm tortillas or crusty bread on the side if you want more.
