Savoury Rice

What is savoury rice?
Savoury rice is a one-pan side dish of long-grain rice simmered in stock with softened vegetables and a little tomato, so every grain takes on colour and flavour as it cooks. It is the homemade answer to the packet mixes many of us grew up with — the same comforting idea, but made from scratch with real vegetables and proper stock. Why this works
- The vegetables go in first. Softening the onion, celery, carrot and pepper before the rice builds a sweet, savoury base that seasons every grain.
- The rice is toasted in the oil. A moment in the hot fat coats each grain so it stays separate and fluffy rather than collapsing into a sticky mass.
- Stock, not water. Cooking the rice in chicken stock seasons it from the inside, so there is no need to rescue it with salt at the end.
Ingredient notes and swaps
- Rice. Long grain is the classic here and the most forgiving. Basmati works but cooks a touch faster, so start checking it early.
- Stock. Chicken stock gives the fullest flavour, but a good vegetable stock turns this into an easy meat-free side with nothing lost.
- The vegetables. Treat them as a guide rather than a rule. Peas, sweetcorn, carrot and pepper are traditional, but green beans or diced courgette are welcome additions.
- Tomato. The fresh tomatoes bring brightness and the tomato purée brings depth and colour. Do not skip the purée; it is what makes savoury rice look the part.

Method
- Heat the Rapeseed Oil in a pan and add the Onion, Celery, Carrot and Red Pepper
- Fry over a medium heat for about 5 minutes until softened but not coloured
- Add Rice and stir to cover the grains in the Oil
- Add the Tomatoes and Chicken Stock and bring to the boil
- Simmer for 6/7 minutes
- Reduce the heat and add the Sweetcorn, Peas and Tomato Puree
- Simmer gently until the Rice has absorbed all the liquid, about 10/12 minutes
- Add the crushed Garlic and stir
- Season with the Salt and Black Pepper
- Scatter over the Parsley and serve

Keep a close eye on the rice during this final simmering stage. The aim is for all the liquid to be absorbed, leaving you with tender, fluffy grains. If it's still too wet after the suggested time, continue to simmer gently for a few more minutes, checking regularly.

- Keep the heat gentle once the stock is in. A hard boil knocks the grains about and breaks them.
- Stir as little as possible after the liquid goes in, as too much movement releases starch and turns the rice sticky.
- Rest it, covered and off the heat, for a few minutes before forking through. This finishes the cooking and separates the grains.
Make ahead, storage and reheating
- Cool any leftovers quickly, within an hour of cooking, and keep them in a sealed container in the fridge for up to three days.
- Reheat until piping hot the whole way through, loosening with a splash of stock or water as it warms.
- It freezes well for up to a month. Freeze in portions, defrost fully, then reheat once only.

- A generous side for grilled or roast chicken, lamb chops or a piece of pan-fried fish.
- Fork through leftover roast meat or a handful of prawns and it becomes a light main in its own right.
- A crisp green salad is all it needs alongside.
